1 head Spinach
1/2 cup Cauliflower, cut in small pieces
2 stalks Celery, chopped
6 Radishes, chopped
2 Shallots, chopped (or 1 small Red Onion)
1/2 cup chopped Basil
2 Red Peppers, chopped
4 Tbs. Pine Nuts
In a large bowl, combine the spinach, shallots, basil, red peppers, celery, cauliflower, radishes and pine nuts. Toss well. Top with Essential Dressing.
